Today at the farmer’s market I spoke to a local mushroom forager. He was so excited to tell me about the various mushrooms available and their nutritional benefits. Turns out, his wife is also a dietitian! I truly enjoyed purchasing my produce today from people who are excited and knowledgeable about high quality food, which inspired me to try something new with my cooking. The ingredient that was new to me here were the Black Poplar Mushrooms. These lovely little mushrooms brought to this simple dish deep, rich, and bold flavor while supplying a plethora of nutrients. Here are a few highlights of some nutrients they are rich in:
Fiber: aids in healthy blood sugar, digestion, and feeling satiated
Antioxidant selenium: anti-inflammatory and anti-aging benefits
Vitamin C: helps promote healthy immune system.

Mushroom & Goat Cheese Omelette
This simple dish brings deep, rich and bold flavor along with a plethora of beneficial nutrients.
Omelette Filling and Topping

1 cup of Black Poplar mushrooms
2 tbsp of diced onion
1 tbsp grass fed butter
a pinch of thyme
a pinch of sage
salt and pepper, to taste
1 ounce of goat crumbled goat cheese
Directions
- Sautee mushrooms, onion, and seasonings in the butter over medium heat until golden brown and tender.
- Add as filling and topping to your omelette along with the crumbled goat cheese.
