Robin has been a Registered Dietitian and nutrition educator for over 20 years. She has worked clinically and as a college professor in dietetics throughout her career. She has been a Dietetic Internship Program Director for eight years and has a passion for mentoring aspiring dietitians. As Founder and Executive Director of Lagniappe Wellness, she seeks avenues for those inspired to take their education, health and wellness to the next level.

Mindy Scott, RD
Assistant Program Director

Mindy is a Registered Dietitian with a clinical background and has been with Lagniappe Wellness since day one. As Assistant Program Director, Mindy takes great pride in mentoring interns from application, internship and beyond. She strives to keep our interns engaged through creative, out of the box learning experiences that help our interns make positive connections in their knowledge, classroom and professional relationships.

Deborah Colby, M.Ed., RD, LD, CDE
Diabetes & Obesity Focus Area Course Instructor

Deborah Colby is a Registered Dietitian, Certified Diabetes Care & Education Specialist. She has a Master’s of Education in Health Promotion from the University of New Orleans. Deborah has practiced as a Dietitian for over 35 years. The majority of her career, she has worked with Diabetes Self-Management Education and Support (DSMES) Programs and has provided Medical Nutrition Therapy to individuals with diabetes. In 2005, she co-founded Gulf Coast Health Educators, a 501C3 non-profit, whose mission was to provide diabetes, obesity and heart health education to the underserved on the MS Gulf Coast. Deborah served as the Executive Director until 2014 when she was hired as the Education Director for the National Diabetes & Obesity Research Institute at Tradition. Deborah developed two diabetes education programs that were accredited through the Association of Diabetes Care & Education Specialists (ADCES). Deborah is also a Lifestyle Coach for the CDC’s Diabetes Primary Prevention Program. She is past Chair of the Diabetes Coalition of MS and currently serves on its Board. She was a speaker for Merck Pharmaceutical Company conducting virtual diabetes education classes. Since 2017, Deborah has served as the RD presenter for the Certified Diabetes Care & Education Specialist Exam Prep Course sponsored by the MS State Department of Health. Deborah received the Outstanding Dietitian Award from the MS Academy of Nutrition and Dietetics in 2014. Deborah retired from the National Diabetes & Obesity Research Institute in 2019. In 2020 she received the Pioneer Award from the Diabetes Coalition of MS in recognition of the impact her service has had in the lives of those living with diabetes in MS. Deborah currently serves as an adjunct instructor for Lagniappe Wellness Dietetic Internship.
